My favorite Cinnamon/Chocolate Chip Challah

Ingredients:

½ cup lukewarm water

2 tablespoons yeast

1 tablespoon sugar

7 large eggs

2 cups sugar

1 ½ cup oil

7 teaspoons salt

4 cups boiling water

5 pounds bread flour (I like using King Arthur brand)

Egg wash – beaten egg and a little water

Optional: Cinnamon/sugar mix and/or Chocolate chips

Instructions:

  1. In a medium bowl mix lukewarm water, yeast & sugar and stir gently.  Let bowl sit in a warm place for about 5-10 minutes while you prepare other ingredients.  Yeast should bubble and thicken.
  2. In a medium bowl beat eggs slightly.
  3. In a very large bowl mix sugar, oil, salt, and boiling water.
  4. Add eggs to yeast mixture and mix.  Add egg/yeast mixture to ingredients in large bowl and mix.  Slowly add bread flour to large bowl too.  Mix/knead until all is combined.
  5. Cover and let the dough sit in the bowl until it doubles in size – about 2-3 hours.
  6. Do the mitzvah of hafrashas challah (Complete info HERE) .
  7. Shape the remaining dough into loaves, top with egg wash and optional cinnamon/sugar or chocolate chips. (I usually do 1 teaspoon cinnamon to 6 teaspoons sugar which covers 2 challahs)

Should make 6-7 loaves.  Bake at 350 degrees for about 35 minutes.
